I’m kinda excited to finalllyyy be posting (: TJ and I had a steak night last week, because I’ve been CRAVING steak like no OTHER since two or three weeks ago. We wanted to be fancy schmancy, so we made <em>pan seared rib eye steak</em> with a side of <em>baby spinach insalate topped with crushed pecans, dried cranberries, and feta cheese. </em>This was the first time I’ve ever made steak, and I’m proud to say that <strong>it came out perfectly.</strong> Exactly medium rare, not too bloody and not too dry, with right amount of seasoning. Since it was the last few days before summer, we were out of our usually abundant stock of boba, so we resorted to regular tapioca instead. I also made cheesecake last week, and forgot to take pictures of it :[ Even though we forgot to add vanilla, the cheesecake came out AMAZINGLY. Topped with raspberry pie filling, they made an amazing end to the steak night we had Friday.<br />
Then, last night, A., S., and I made crepes. As a meal they were wrapped around hash browns, ham, tomatoes, and a sprinkling of cheese. Then, for dessert, tucked around a generous slice of cheesecake. But these staples get a bit boring when sometimes, cereal has to make do for lunch or dinner too. Imagine my surprise, then, when I wake up one morning to the smell of actual food! Of course it was TJ, the experimental one, whipping up some egg and cheese filled tomatoes. Though she ended up taking the eggs out of the tomato and scrambling them before putting them back in the tomato, these still ended up looking pretty legit. An egg that belongs to me is a rather find because, though we usually have four cartons of eggs in the fridge, none of them ever belong to me. Thus, I thought I should celebrate this discovery by making something special with one of my favorite ingredients: cheese! This variation of the popular breakfast sandwich is vegetarian friendly, and healthy too, because it uses a whole wheat english muffin with low fat pepper jack cheese!<br /><br />Even though I turned vegetarian a few weeks ago, I broke it for winter break. I'd like to use the excuse that my parents do not approve of me being vegetarian (which is true, by the way- they threw a fit when I went vegan two years ago), but in a way I missed eating meat. Yet another commodity in college. I made some amazing shiitaki mushroom rolls, which my friend liked the best. The ones on the outside bottom are pork sung rolls (I came up with them myself, although I'm pretty sure pork sung is a common sushi filling with non-traditional sushi makers), the ones covered in sesame are California rolls, and the ones on the bottom (which are triangular!!!) are the shiitaki mushroom rolls. Here's a close up: </p> <p><a href="http://lh4.ggpht.com/_p1P5cdaQ7vw/SUXQhEGqC5I/AAAAAAAAADM/5QuqdwkvP1k/IMG_2365%5B4%5D.jpg"><img style="border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px" height="158" alt="IMG_2365" src="http://lh4.ggpht.com/_p1P5cdaQ7vw/SUXQh8iTM7I/AAAAAAAAADQ/mgbmgcrAlsw/IMG_2365_thumb%5B2%5D.jpg" width="233" align="left" border="0" /></a></p> <p>  My photography skills are still a work in progress, so this picture is out of focus, but at least you can see the shiitaki mushroom!  So from the left, california roll, shiitaki mushroom roll, and pork sung roll! </p> <p> </p> <p>And here, for a bit of holiday goodness, is my (approximated) recipe for pork sung rolls!</p> <p><strong>ingredients:</strong></p> <p>4 sheets of nori <br />2 cups of prepared sushi rice* <br />1/2 cup of pork sung** <br />1/2 medium carrot <br />1/2 japanese cucumber</p> <p>1. slice your carrot and cucumber into small stalks that are about 3mm on each side.</p> <p>2. I hope you have a bamboo mat.. but if you don't plastic wrap works, but not NEARLY as well. Whichever you choose to use, place your nori sheet on it. </p> <p>3. Spread about a quarter inch thickness of rice more or less evenly over the bottom 3/4 of the sheet of nori. In my case it's usually less evenly, but the areas where there are more rice will balance it out! I use a wooden spatula to spread the rice, but you can use your fingers, dipped in a bit of vinegar mixed with water, if you'd like. </p> <p>4. at the very bottom of the rice, line up 2-3 stalks each of carrot and cucumber across the width of the nori. Take some pork sung, maybe a teaspoonful at a time, and squish it to the carrot/cucumber so you have a long line of pork sung. There's no right amount to use, but I use typically about. 3/4 of an inch wide strip of pork sung. </p> <p>5. Starting at the bottom of the sheet, and with a firm and even grip, start rolling the nori up, making sure to press along the width of the sheet so it rolls evenly. Make sure you do not roll the plastic wrap / bamboo mat INTO the sushi (yes, dumb as it sounds, I have done this). Press firmly, so the sushi holds, but not so firmly that the nori breaks. </p> <p>6. At the very end of the roll, the nori that was not covered in rice should overlap and seal together the ends of the roll. Feel free to spread a little bit of water along the edge of the nori to help it stick to the rest of the roll.</p> <p>7. YUmmieee) so my mom bought me a huge box of Cheerios. I don't think ANYONE can eat two ENTIRE full sized bags of Cheerios without getting sick, so naturally, I wanted to do something with them OTHER than mixing them with soymilk. So I went on the Cheerios website, found a recipe for Breakfast Cookies (like.. cookies.. AND breakfast. What could be better?!). The original version was a bit high sugar and high fat, so I changed the recipe a little. Here's my version:<br /><br /><span style="font-weight: bold;">Cheerios Breakfast Cookies</span><br />ingredients:<br />1 1/4 cups Splenda Granular<br /> 1/2 cup Blue Bonnet Spread<br /> 1/2 cup Peanut Butter<br /> 1/4 cup water<br /> 1/2 tbsp vanilla<br />1 egg<br />1 1/2 cup Gold Metal Whole Wheat Flour<br />1 cup Quaker Old Fashioned Oatmeal<br /> 1/2 cup Raisins<br /> 1/2 cup Pine Nuts<br />1 tsp Salt<br />1 tsp Baking Soda<br /><br /><p style="margin: 0in; font-weight: bold; font-family: Calibri; font-size: 11pt; font-style: italic;">Directions</p> <ol><li><span style=";font-family:Calibri;font-size:100%;" >Heat oven to 375°F.</span></li><li><span style=";font-family:Calibri;font-size:100%;" >In large bowl, stir together sugar, butter, peanut butter, water, vanilla and egg. Stir in remaining ingredients except cereal. Gently stir in cereal. On ungreased large cookie sheet, drop dough by rounded 1/2 cupfuls (rounded 1/3 cupfuls for 15 cookies) 4 inches apart. Flatten dough to about 1 inch thick. (Bake these crispy cookies as soon as the dough is mixed. Letting the dough stand awhile or refrigerating the dough will make the cookies softer.)</span></li><li><span style=";font-family:Calibri;font-size:100%;" >Bake 13 to 15 minutes or until golden brown. Let stand 5 minutes before removing from cookie sheet. Store loosely covered. </span></li></ol>Notes: I ran out of vanilla, so I only used 1/2 a tablespoon (this is reflected in the recipe). I also didn't have the 1 cup of raisins called for in the original recipe, so I used pine nuts instead. When I was mixing the wet ingredients with the dry (especially when mixing the cheerios in), the peanut butter + butter mixture just stuck to itself, and the cheerios didn't really stick to that dry mixture. I think next time I make this recipe I'll try adding a bit more water (What my mom suggested). What worked out this time though, was just shaping the cookies with my hands. I just smooshed whatever excess cheerios I had on top of the balls of dough I made with my hands. Granted, this process made the cookies a lot more breakable than they should be, but they were yummy. My cookies got REALLY big so I left them in the oven for a couple extra minutes, and the cheerios got nice and crunchy, while the dough was still chewy.
